It’s the start of Winter and the best time to dust off your Winter recipe books and look for new and healthy, hearty recipe’s to add to your collection to beat the cold blues.
Granny Mouse Country House & Spa Chef, Ryan Brand gives us a run-down of his favourite hearty recipe that is packed with all the taste and warmth in a meal that is made to be eaten in Winter. The ingredients and directions for the recipe are as follows:
Lamb shanks, Roasted Vegetables and Creamy Mashed Potatoes Ingredients
For the shanks
- 4 350-400g shanks
- 1 large onion sliced
- 4 cloves garlic chopped
- 2 medium carrots peeled and chopped
- 1 celery stick chopped
- 1 cup flour
- 1L beef stock
- 2 tbsps. tomato paste
- 1 cup red wine
- Salt and pepper
- 3 sprigs rosemary
Method
- Put the flour on a baking tray and season with salt and pepper and coat the shank, then fry the shanks on all sides until they are golden brown.
- In a pot big enough to fit the shanks, sauté off the onions carrots and garlic
- Add tomato and allow the mixture to catch slightly at the bottom of the pot and then add the red wine and deglaze
- Add the sealed shanks, beef stock and celery and cook on a low heat for about 2hrs30mins
- If the liquid drops, add boiled water
- Once the shanks are cooked, remove from the pot and reduce the cooking liquid until it becomes thick like a gravy and it is then ready to serve.
Roasted vegetables
The roasted vegetables should include – Carrots, turnips, parsnips, butternut, baby onions, beetroot and rosemary. Boil the beetroot, cool and remove the skin. Peel and cut the vegetables into desired size, season with salt and pepper and roast in the oven for 20-25 minutes
Mashed potatoes
As with most mashed potato recipe’s, you would need 1kg potatoes, 100ml cream and 50g butter, which you would then follow the method of peeling and boiling the potatoes until they are soft enough to mash. In a saucepan combine cream and butter until it is warm. Add the mash and stir with a rubber spatula or wooden spoon and season to taste.
After all the ingredients are ready, plate up using the mash as the base, the vegetables as the middle layer and the meat on top with the gravy poured over and there you will have a delicious meal for the whole family to enjoy.
