Meet Granny Mouse’s new Executive Chef, Shaun Christian!

Granny Mouse Country House & Spa recently welcomed the appointment of their new Executive Chef, Shaun Christian, into the kitchen.

43 year old Durbanite, Christian, has been in the hospitality world since 1998 and has gained much experience internationally.

“I am highly motivated and energetic with a passion for food and the art of cookery. Communication, creativity, innovation and the ability to perform well under pressure are some of my personal strengths. I am a good team player, both able to lead, as well as learn from others,” he said.

Christian’s experience internationally saw him working in London as Head Chef for Cinnamon Cay Restaurant, Part-time Chef for Rhubarb Catering, Sous Chef for the The Lavender Restaurant and Bar as well as Chef de Partie for The Sun. He then returned to South Africa and took up a position in the Eastern Cape as Head Chef for Riverbend Country Lodge after which he joined the team at Hout Bay Manor Hotel in Cape Town as Executive Chef where he remained for a year before leaving for Durban’s Bean Bag Bohemia as Outside Catering manager.

The adventurous Christian then headed off to Kampala in Uganda, taking up a position as Executive Chef of a 5 star property – Wildplaces Africa’s Emin Pasha Hotel from 2006 until 2010. He then moved to Operations Manager at Wildplaces Africa’s Pineapple Bay on the Bulago Island in Mukono District, Uganda until January 2012. Then in May of the same year, Christian went back to work at Emin Pasha Hotel before taking up a position as a Consultant Chef for BB Consulting in Kampala, Uganda.

Once again, after a number of years, Christian decided to return home to South Africa after securing his position as Executive Chef for granny Mouse Country House & Spa in the KZN Midlands.

With his wealth of knowledge and experience in the field, Granny Mouse Country House & Spa have definitely found a gem to add to their team. Granny Mouse launches its new Bistro Menu!

With the introduction of new Executive Chef Shaun Christian, Granny Mouse Country House & Spa thought it fitting to launch a new menu for its Bistro restaurant.

With an array of appetizing starters – from that of the famous soup of the day, mushroom au gratin, antipasto plate, calamari fritto misto, pan fried tiger prawns to pernod snails, this new menu has been designed to reflect the palate of Chef Christian and is affordable for all, starting from just R45 each.

Presenting the main menu, one will find a number of new salads & bites, including the likes of tempura paneer and butternut salad as well as fig and blue cheese tartlet. Included, is a number of pasta dishes for those who like to indulge in something filling – try the smoked snoek kedgeree or red velvet ravioli, just to mention a few. There is also a range of hot meals on the menu from a lamb pot, guava glazed beef short ribs, lamb shank saagwalla as well as choices that are seafood or vegetarian specific with our highest cost being only R125.

For those with a sweet tooth, the dessert menu includes chocolate chickpea torte with spiced Asian tea ice cream, amarula chocolate fondant with chocolate and mint ice cream – and more- which always ends off any lunch on a high note!

Chef Christian, who is new to Granny Mouse comes is sure to maintain Granny Mouse’s high quality standard. Being in the hospitality industry for over 15 years, having travelled from Uganda, London, Cape Town and Eastern Cape doing what he does best, Chef Shaun’s passion for food is portrayed in all his dishes.
